Ubuntu might be just what you need to help her remotely. I suggest Linux Mint (wich more or less is Ubuntu). Install and set up remote desktop with a password and copy the ip. Then you can see what see needs help with instantly. Add what shee wants in the quick launck on firefox and she should be good to go. You going to get this phone call no matter what "how do i close windows" so be patient

I've seen some great How To Videos or "screencasts" that she might enjoy? Some might even sound very familiar to her ;-)

http://screencasts.ubuntu.com/

Ok joking aside given the fact she's not been brainwashed to the MS/Apple way of doing things it might be the perfect opportunity even for yourself to see how effective the help guides and videos are..

Get her up and running with Gramps. In ubuntu, it is apt-get installable. My mother has been using Ubuntu for the past 2 years and LOVES it. My mother is also into geneology and now prefers gramps over the proprietary (and commercial) Family Tree Maker. She might get a kick ouf of that.

With my mom she adjusted to web-browser very quickly thanks to bookmark toolbar. And she can handle gmail, skype and picasa web-albums, facebook etc. She doesn't have computer literacy (right vs left vs double click, folders/files downloading/attaching and knowing what's happening...) but that's not the point. She doesn't need those functions she just goes on the internet for fun. I don't know what's your teaching plan is but web-based email & how to use google and bookmarks will be more than enough for first few weeks. After a month or so I got a call from her saying so how do I upload pictures? then I showed her picasa. So my only advice take a getting-things-done vs "And this is a filesystem....."
